A taste of Manta Rota: O Finalmente restaurant shares its history, inspirations and love for local flavors

From the first bite to the last, great restaurants are built on passion, creativity, and a deep love for the community. We spoke to O Finalmente to find out more about their journey to the opening of the restaurant, the flavours that inspire them the most and what keeps them connected to the vibrant culture of Tavira.

 

Q: Tell us a little about yourself.

A: Born in the wild and free Manta Rota of 1978, O Finalmente started as a simple beach bar: a cold beer in hand, good music in the air and feet still with sand. Over the decades, it has evolved with the times - without ever losing its soul - until it became the cozy and authentic family restaurant it is today.

 

Q: What inspired you to start and how did you get involved?

A: Finalmente is more than a restaurant: it is a family home. Founded by our parents, it has remained in the hands of the same family since day one. Since 2020, it has officially passed to the second generation — us, Cristiana and Simão — two Algarvians with salt in their blood and childhood stories among pots, pans and tables full of happy people. We grew up in this space, learning from the best: our mother, Noémia, and the tireless Célia, cooks with a mother's hands and a grandmother's heart, who know the flavors of the Algarve like no one else. Today, we fuse this wisdom with our contemporary look, bringing to the table a traditional Portuguese cuisine with creative touches, without ever losing its essence. What moves us? To preserve and celebrate the true Algarve gastronomy, the one that is fading and that we want to keep alive so much.

 

 

Q: What do you think makes Tavira, and the region, such a unique place?

A: We have a special affection for Tavira, of course, but as our heart (and restaurant!) is in Manta Rota, we take the opportunity to highlight this little jewel by the sea. With an immense sandy beach and a still preserved nature, it is the perfect place for those looking for sun and sea in summer, as well as for those who want peace and contemplation in winter. Here, summer memories are created with friends and family — and the rest of the year, there are walks along the beach, sunsets over the sea and that rare feeling that time slows down. A walk between Manta Rota and Cacela Velha, for example, is like immersing yourself in the serenity of the Algarve's nature.

 

Q: Do you have a favorite place in this area that you think more people should know about?

A: The Ria Formosa area, especially between Cacela Velha and the Fábrica site, is a real well-kept secret. Calm tides, wildlife, fresh oysters and a golden light at the end of the day that feels magical. And one of those places where you can feel the true spirit of the Algarve - simple, natural and absolutely unique.

 

Q: What's next for you in this project? 

A: Right now, we are focused on reinforcing what has always defined us: authenticity. We want to continue to serve dishes that honor the Algarve tradition, both in the flavors and in the stories they carry. But we are also attentive to what grows in the region, such as Algarve wines — which are finally starting to gain the attention they deserve. We are building a menu with local producers, surprising labels and pairings that elevate the experience at the table.

 

 

Q: If you could describe yourself in three words, what would they be?

A: Authenticity, tradition and good food.

 

Q: What is your favorite order at a local restaurant or café?

A: Corn Porridge with Clams, a dish that tastes like the sea and childhood, and to end on a high note, a Dom Rodrigo. Pure Algarve!

 

Q: If you had a free day to explore or enjoy the Eastern Algarve, how would you spend it?

A: It started with a morning walk on the beach of Manta Rota, barefoot and with a light soul. Then, strong coffee and a pastel de nata on a terrace facing the sea. It was on to a long lunch with grilled fish and fresh white wine. In the afternoon, a siesta in the shade, a visit to Cacela Velha at sunset and, who knows, a late supper with friends, good conversation and the sound of cicadas rocking the summer.

 

 

Q: What is a hidden talent or a fun fact about you that most people don't know? 

A: Did you know that O Finalmente is called that... why did the licenses take so long to come out that when they finally arrived, our father said, "Finally!"? And that's it, the name remained! An Algarve story, with bureaucracy in the mix and a lot of sense of humour.

 

Finalmente is more than a place to eat — it's a celebration of Manta Rota's rich flavors, warm hospitality, and community spirit. Whether you're a local or just passing through, every visit is an opportunity to savor food made with passion and care.
